A typical South African weekend comprises of at least one braai "barbeque", there is nothing better than chilling with your friends with an ice cold Castle Lager in your hand while your meat is on the braai.
So try this recipe out for your own home-made Chakalaka.
Ingredients:
- 4 tablespoons oil
- 1 large onion, finely chopped
- 4 -5 garlic cloves, crushed
- 2 tablespoons ginger root, peeled & grated
- 3 small chilies seeded & chopped (or not if you don't want it hot)
- 2 tablespoons curry powder
- 1 (14 ounce) can whole canned tomatoes, coarsely chopped
- 1 green pepper, seeded & chopped
- 2 carrots, coarsely grated
- 1 (8 ounce) can baked beans in tomato sauce
- ½ head cabbage, shredded
- Salt & pepper, to taste
Preparation:
Heat oil and sauté onions,
garlic, ginger and green pepper with the chillies and curry powder for five
minutes.
Add the carrots and
cauliflower.
Cook gently for about 15
minutes, or until all vegetables are cooked.
Add beans and seasoning,
heat through and allow to cool.
Serve cold.
